The beans ripening in the field are separated from their peel after being dried, sieved, calibrated and presented for consumption after being freed from foreign substances. It is the most preferred beans of the consumer due to its soil properties and growing with snow water, it is durable, thin crust, quick cooking and taste. It is coarse grained, full and flat-looking, one end is flat, the other end is oval-like, in vivid white. It is very important for the beans to have a regional difference and a homogeneous structure. It is cultivated mostly in the Central Anatolia region, in Nevşehir, Derinkuyu, Niğde and Erzincan regions.
